I have been experimenting with baking lately to find healthy and guilt-free recipes made with natural ingredients. What inspired me to start baking was my wish to enjoy desserts without the guilt of eating unhealthy or processed foods. I really want to find the best natural recipes made with wholesome ingredients many of us have in our kitchen already and are as non- processed as possible. So, when I found this gluten-free almond flour lemon cake recipe on Instagram by @desserttastyrecipes, I had to try it! I actually made it for my dad’s birthday and my whole family loved it, so I had to share it with you guys 🙂 It’s perfect for anyone who needs to avoid regular flour and is such a wonderful dessert option for those with celiac disease too!

This was only my second attempt at making it in this video, so it’s not flawless, but that doesn’t matter when it comes to taste! Enjoy 🙂
Gluten-Free Almond Flour Lemon Cake Recipe

Ingredients for 8 slices in 15cm/6in diameter circle baking dish
2 cups almond flour
1/4 cup olive oil
1/4 cup lemon juice (2 lemons)
2 eggs ( I put 3 small eggs)
3 tbsp honey
1 tbsp lemon zest (I put 1 lemon’s zest)
1/2 tsp baking powder
1/2 tsp baking soda
I then added vanilla which isn’t apart of the original recipe but for my taste I wanted to add some
Almond Flour Lemon Cake Recipe Instructions
🍋Add all the ingredients in a bowl and mix
🍋Pour batter into baking dish with parchment paper – the original recipe used a 15cm/6in diameter circle baking dish, but mine was bigger than that and still worked.
🍋Bake at 356 F (180C) static oven for 25 mins (last 5 mins covered with foil to prevent the top to burn) – this is what I didn’t do and as you can see from the video it was a little overcooked at the top
Optional:
If you want to enhance your cake and appreciate the blend of sour and sweet, think about drizzling melted chocolate on top. This will add a deliciously rich chocolatey-sour flavour!
